Mele Kalikimaka & Happy Holidays
from Coconut Cottage Bed & Breakfast


Aloha All,

We are enjoying beautiful sunny 80 degree island weather as we enter this wonderful time of the year.
During the holidays we would like to wish all of our guests a very joyous season and a Happy New Year.

We have had several requests for recommendations on our favorite Hawaiian holiday music, so we decided to share with you our top three selections (all are available on iTunes).

During this holiday season we would also like to share with you the recipe for our banana muffins/bread. It is one of our most requested recipes.

1 cup sugar
3 bananas (6 if using apple bananas)
2 eggs
½ cup butter
2 cups flour
1 tsp baking soda
½ tsp salt (omit if using salted butter)
1 cup nuts (optional)

Mix with fork. Bake in greased muffin tins at 350 degrees for 30 minutes. If in a bread tin, bake at 300 degrees for one hour.

Summertime

Aloha!!!

Yes it is summertime in beautiful Hawaii and we are enjoying all that the Big Island has to offer. We continue to welcome guests from all over the world. We currently have our first "threepeats" staying with us and it feels like welcoming family back to the B&B. Our guests are enjoying Madame Pele's nightly shows--she very rarely disappoints. A number of guests have gone on boat excursions out to see the lava up close and personal. They say that it's an experience of a lifetime and Jerry has to agree. In July Jerry and his son, Christian, took a boat out to see the lava and as guests have said, it's incredible.

The fall looks to be busy with guests from all over and we look forward to celebrating the holidays in Hawaiian style.!

New Plantings

Well we finally planted some fruit trees on the property and we're ready for the limes, tangerines, ruby red grapefruit and rambutans to start producing!!! We purchased the trees a couple of weeks ago from a local company that specializes in growing numerous kinds of fruit trees. They only sell them to the public twice a year so we are fortunate that we caught them at the right time. We want to also plant some papaya trees, but this company does not grow them. We do have some leads on the papaya trees and we'll be planting those soon. Our property is gorgeous, but we just don't have enough fruit trees so with these recent additions we are on our way to producing homegrown fruits for guest breakfasts. Our horticulturist/friend Kathleen helped us plant the trees in the proper locations and with the correct amount of mulch and fertilizer.

We have actually taken time out our busy schedule to enjoy a day at the beach. A local told us about an secluded beach that is absolutely beautiful. It looks like something out of a movie. It was apparently spared by the 1990s lava flow and is a true gem.

The Lava is Flowing

It's a truly an exciting time around Coconut Cottage Bed & Breakfast. The lava flow is spectacular and not too far away--although it's not at all threatening to our place. Many of our guests have been enjoying night viewing of the flow, which currently includes five "entries" into the ocean. We are currently working on some new yard additions, including a gigantic Buddha head statute that is illuminated at night by a solar light. We are also installing some beautiful wood blinds in the Bali Spirit Suite and in the Grand Pineapple Suite.
